POPSUGAR lists 21 top retailers and the employee discount programs. It mostly consists of clothing stores like H&M, Gap, J. Crew, and Victoria's Secret, but also includes a few larger stores like Kmart and Target. These discounts aren't always limited to just the employee, and they'll include other family members and friends—so check the rules and make sure you take advantage.
Note that the list isn't comprehensive—Apple, for example, lets employees buy on behalf of family and friends through the Employee Purchase Program. But it is a solid list. Check the link for more.
